Starting off young and ambitious, Chef Kam moved to Switzerland to work as a cook in Chinese cuisine. In the hotel, he had the opportunity to meet with chefs from other nations whenever the hotel organizes International Gourmet Festival. That was the time he befriended chefs from Thailand and Vietnam where the used of backyard spices and herbs captivated him. Wide-eyed and enthralled by ingredients as simple as a lime, Chef Kam watched as the chefs cooked a variety of dishes from the region of Indochina with taste bustling with sweetness, sourness, saltiness and spiciness that broke all the rules of Chinese cooking. With a burning passion and love to experiment with the newfound ingredients and techniques in Thai and Vietnamese dishes, he started to design new menus with the region’s spices and herbs. Thai Style Lamb Rack
The twist of Thai and Western, I am pretty amazed with what it is being served. The lovely lamb rack is being cooked till perfection, topped with the creamy green curry paste. Amazingly good with no greasy nor gamy taste in it.
Grilled Lemongrass Chicken Chop
Imbued with the fragrance and flavours of lemongrass, it is indeed a delicious one to go for. The lemongrass is well infused in the chicken making the taste simply aromatic and good. I am indeed impressed with how it is done and every mouthful of the lemongrass chicken comes awesomely good with the hint of lemongrass in it. Chicken meat remains tender and juicy.
